BBQ Salmon

I love the versatility of cooking outside. Cooking fish on the grill is amazing but can be challenging. Let me share with you a great Salmon recipe that is amazing and taste phenomenal.

Drum Smoker

Cedar Plank

Ingredients

Protein:

Salmon Filet (skinless)

Seasoning:

Kinder’s Master Salt and Seafood Blend

Glaze:

1 part Honey

1 part Yellow Mustard

1/2 part brown sugar

Few drops of tabasco sauce

Salt and Pepper to taste

Time Line: 

2 hours prior to cook

Make sure fish is thawed and dry. Season liberally with Master Salt and Seafood Blend. I don’t soak a cedar plank. I stopped soaking wood chips many years ago because wood it increases the chance to make things smolder creating bad smoke in the cooking chamber. So I don’t soak a cedar plank either.

Start a medium fire with indirect setup (offset fire for say a Weber Kettle, or fire way below the grate if used in a drum) and add a chunk of your preferred flavor wood. Once your wood chunk is burning clean. Place salmon on plank and then the plank on the grill. You want the salmon to cook slowly.

Once the surface starts to dry out, then add the glaze. Cover all of the fish to create a binding flavor coat around the fish.

Let the cook do its thing until the salmon is 135 to 145F. The fish should be slightly flaky but not dry. The glaze should be sticky and intensely flavored providing a perfect compliment to the meat.

Serve with freshly grilled lemon and fresh herbs.
