Rich, Silky, Smokey, Crunchy Bite

There was a time that I bought a plate rib, you know “Dinosaur Bones”. The ones that you see on Instagram all the time. The bone is about 9 inches long and all the meat is on top of the bone approximately 2 inches high. The plate rib only comes with 3 bones and I was thinking how all my friends taste this amazing piece of meat. So I developed these Beef Rib Crostini’s, please use or create your own version.

Cooker Used

- Drum Smoker

  • I used this drum with deflector plate because these units will cook faster with no fuss through the cook but produce meat with great tenderness and smoke flavor

Food used

- Prime Beef Plate Rib

- French Baguette

- Mustard Aioli

Instructions

  1. Cook Beef Rib and let it rest. Beef Rib Recipe will be coming, stay tuned

  2. While beef is cooking. Mix your own aioli and let set in fridge. See ingredients below but feel free to be creative here. Taste your food

    - Yellow Mustard 1 tablespoon

    - Brown Sugar 1 tablespoon

    - Fresh minced garlic 1 teaspoon

    - Few drops of tabasco sauce

    - Salt and Pepper to taste

  3. Toast Crostini’s. Use a breadknife, slice the baggutte at an angle. Place all on a baking sheet. Spray bread lightly with cooking spray. Place bread in the oven on low broil for about 2 minutes until the bread is crunchy on top

  4. Spread aioli onto toasted bread and top off with slice of beef rib. Be sure to slice against the grain and remove any extra fat for a better presentation

  5. Pass around and enjoy!
